Roasted Ratatouille

Time: 70 minutes

Note: This simple roasted vegetable dish is a perfect accompaniment to a summer feast and is a perfect way to show off freshly grown produce.

Ingredients:

  • 1 medium eggplant, sliced 1/4 inch thick

  • 3 medium tomatoes, sliced 1/4 inch thick

  • 1 zucchini, sliced 1/4 inch thick

  • 1 red onion, cut in half, then 1/4 in thick slices

  • 1/4 cup extra virgin olive oil

  • salt & pepper to taste

  • 1 teaspoon Herbs de Provence

Directions:

  1. Heat oven to 375 degrees F

  2. In a large bowl, mix together all of the ingredients except for the onion slices (keep onion slices intact)

  3. Assemble in baking dish by lining all ingredients up in alternating rows.

  4. Roast for 60 minutes

  5. Serve
